Here is what I harvested from my garden last week:
July 17
- 29 Tomatoes
- 2 Cucumbers – look at how big they are!
- 1 head Romaine Lettuce
- 2 Summer Squash
So, what did I do with all the veggies?
7 gallon-sized freezer bags full!!!

Jarred some refrigerator pickles
Homemade Refrigerator Pickles
Ingredients:
- 2/3 cup distilled white vinegar
- 2 teaspoons salt
- 1-1/3 cups white sugar
- 4 cups sliced cucumber
- 2/3 cups sliced onions
- 2/3 cups sliced bell peppers
Directions:

In a medium saucepan over medium heat, bring vinegar, salt and sugar to a boil. Boil until the sugar has dissolved, about 10 minutes.

Place the cucumbers, onions and bell peppers in a large bowl. Pour the vinegar mixture over the vegetables. Transfer to sterile containers and store in the refrigerator.
